Harris and Lewis Smokehouse, Stornoway

Located in a former Royal Mail sorting office, The Harris & Lewis Smokehouse, Stornoway, combines traditional fish smoking techniques with contemporary design and dining. Works comprised the conversion and extension of the existing portal frame industrial building into a flagship smokehouse, 46 cover café, shop, office, and welfare facility. Externally, the building’s industrial factory function is articulated through the use of composite steel cladding, which softens to a refined combination of inset cedar wood cladding and a glazed wall, where the building’s public entrance, shop, and restaurant are marked out at the principal façade. Transforming the salmon from raw whole fish to smoked and packaged fillets ready for sale, required a systematic design where the process was key with hygiene and efficiency at the core.
